Caramelized Almonds

For the preparation of these caramelized almonds, you will need:


Jam Pot Casserole Copper Stewpot Colher em Cobre

Ø 30 CM Jam pot


Ø 24 Cm Stewpot

Copper ladle


200 Gr of sugar

150 Gr of almonds with honey

100 mL of water

Vanilla pod

1 Lemon


In slow fire, place a copper pan with water, sugar and a little bit of lemon. Stir with a wooden spoon.

When the sugar and water mixture starts bubbling, place the almonds and stir with the wooden spoon.

Slowly the sugar will get toasted and the fire must be reduced so that the almonds don't burn.

The sugar will go through several stages until it gets crystalized over the almonds. Between those stages you should stir frequently.

Remove the almonds from the pan and with the help of a sieve clear the excess of powdered sugar. This removed sugar is placed in a vessel with a vanilla pod to flavor.

Let the almonds cool down.

Grease up a tray with butter and place the almonds. Sprinkle with the powdered sugar previously saved with the vanilla.
